Copy 28 pages from PDF into Google Doc

I have 2 PDF files that are 28 pages total of text from some legal documents. The documents are clear to read but they are a little crooked so some OCR software doesn't work well, and even when I use OCR software I find some inaccuracies. I want you to get all the text from these PDFs into two Google Doc files. Accuracy is CRUCIAL. I don't mind if you use OCR software or AI to start, but you must be responsible for reviewing all of this to be sure it is perfectly accurate. This is not a quick job that you can just use OCR/AI and be finished. Successful completion of this job means you have manually checked the documents and verified their accuracy. The documents to be copied are attached.
